Diners at Markley Hall are served dinner consisting of locally grown and organic foods, including beef from the Roseland Organic Farm in Cass County, potatoes from the DuRussel Farm in Manchester and pasta sauce from Eden Foods in Clinton. The April 10 dinner was part of the overall environmental stewardship and sustainability goals of University Housing, says Ruth Blackburn, a nutrition specialist with RDS. Bill Durell, director of RDS, says the Michigan Sustainable Meal was a way of educating RDS and students about what it means to “behave in ways that sustain the integrity and biodiversity of our ecosystems,” and the meal translated those principles into practice.
